The American Egg Board and The Culinary Institute of America (CIA), the world’s premier culinary college, work together on a number of initiatives influencing the foodservice and hospitality industry. The two organizations also collaborated in the development of an educational program, highlighting eggs that combines culinary and nutrition themes from registered dietitians and chefs.

The Culinary Institute of America in partnership with the American Egg Board developed The Incredible Edible Egg online program, which is a collection of recipes demonstrated in step-by-step videos, featuring a CIA chef-instructor. The program explores exciting culinary trends while showcasing the nutritional benefits of eggs in Mediterranean, Latin and other global-inspired applications.
Bridging borders
Eggs are a part of many different cultures’ cuisines. Their versatility is illustrated showing how they can be served during any part of the day. Recipes reflect current menu trends, including traditional and reimagined ideas for eggs in tacos, paella, salads, artisanal toasts and more.
Naturally nutritious
Registered dietitians from around the country collaborated with the CIA on the program to explain the latest science on the nutritional benefits of eggs, and to develop delicious and healthful recipes. The recipes demonstrate how eggs can be incorporated into meals or dishes for those with specific nutritional needs such as athletes or those with diabetes, as well as specific eating patterns like the Mediterranean-style diet or a plant-based diet.
