Method of Production


 Part 1 - Pistachio Streusel

  1. Melt coconut oil for 30 seconds in microwave-safe container, set aside.
  2. Sift all dry ingredients except brown sugar, pistachios and coconut flakes into a stand mixer. Add brown sugar and mix with paddle attachment for 1 minute on low speed.
  3. Add pistachios and coconut flakes, mix additional 30 seconds.
  4. Add melted coconut oil slowly while mixer runs on slow speed. Mix for 1 minute once all coconut oil is added.
  5. Remove and store in a cool and dry place in a sealed container.

 Part 2 - Cake Mix

  1. Sift together all ingredients except brown sugar into bowl of stand mixer and melt coconut oil, set aside.
  2. Add brown sugar to dry ingredients and mix on medium speed in stand mixer with paddle attachment until evenly distributed.
  3. Slowly stream in melted coconut oil into the mix. Let mix on medium speed for 1 minute.
  4. Remove and store in a cool and dry place in a sealed container.

 Part 3 - Mug Cake Preparation

  1. Place 1/4 cup of dry mix into a microwave-safe 8 oz coffee mug or similar volume microwave-safe cup.
  2. Add 1 tbsp of pistachio streusel mix and egg; stir to fully incorporate.
  3. Sprinkle remaining 1 tbsp pistachio streusel mix over top of batter, evenly distributed.
  4. Microwave 1 minute 15 seconds in 1000-watt microwave. Let stand 1 minute before eating.
