Crunchy Chipotle EggPops

Ingredients

  • 12 large hard-boiled eggs, peeled
  • ½ cup guacamole
  • 1 tbsp. chipotle in adobo, mashed/pureed until smooth
  • ¼ cup cilantro, finely sliced
  • 2 tbsp. red onion, minced
  • 2 tbsp. tortilla chips, crushed

Steps

  1. In bowl, whisk together guacamole and chipotle puree.
  2. To assemble EggPops, skewer eggs, dip in chipotle guacamole.
  3. Garnish with cilantro, red onions and tortilla chips.
