Key Lime Egg Soda

This refreshing Vietnamese afternoon pick-me-up may remind you of that all-American Key Lime Pie. It’s sweet, sour and creamy all in one go. Club soda lightens the rich condensed milk-enriched base, and a squeeze of lime gives it just that right balance. Try this with different limes – small Key limes, aromatic Calamansi or even kumquats can work here!

Yield: 1 serving


  • 1 oz. pasteurized liquid egg yolks*
  • 3 tbsp./45 ml./60 gm. sweetened condensed milk
  • Pinch of salt
  • 6 oz./175 ml. club soda - chilled (can also use unsweetened flavored sodas for variation)
  • 1 tbsp./ ½ oz./ 15 ml. Key lime juice (substitute any lime juice)
  • 1 Key lime (substitute any limes)


  1. Combine pasteurized liquid egg yolks, condensed milk and salt in large glass and beat with fork, spoon or whisk until smooth.
  2. Stir vigorously as you slowly add the cold club soda, then stir in lime juice.
  3. Add ice until Key Lime Soda is right up to the rim.
  4. Garnish with slices of fresh lime.

*To ensure food safety, use pasteurized liquid egg yolk product or 1 yolk from a pasteurized shell egg.


  • Can make in large batches. As mixture sits it appears to curdle, yet all you need to do is give it a stir before serving.
  • All egg products are pasteurized. Pasteurized liquid eggs are available as whole eggs, egg whites, and yolks.
