Key Lime Egg Soda

This refreshing Vietnamese afternoon pick-me-up may remind you of that all-American Key Lime Pie. It’s sweet, sour and creamy all in one go. Club soda lightens the rich condensed milk-enriched base, and a squeeze of lime gives it just that right balance. Try this with different limes – small Key limes, aromatic Calamansi or even kumquats can work here!

Yield: 1 serving


  • 1 large egg yolk
  • 3 tbsp. sweetened condensed milk, chilled
  • 6 oz. club soda, chilled (substitute unsweetened flavored sodas for variations)
  • 1 tbsp. Key lime juice
  • 3 Key lime slices (substitute Persian, “normal” lime)


  1. Combine egg yolk and condensed milk in large glass; beat with fork, spoon or whisk until smooth.
  2. Stir vigorously while slowly adding cold club soda; then stir in lime juice.
  3. Add ice until Key Lime Soda is right up to the rim.
  4. Garnish with slices of fresh lime.
