Eggceptional Protein Power Smoothie

Want a protein kick to your daily smoothie? Try adding a whole hard-boiled egg to it! Protein, probiotic and anti-inflammatory properties will help you refuel post workout or hold you over until your next meal. Want to reduce the fat? Substitute two hard-boiled egg whites for the whole hard-boiled egg.

Yield: 1 - 12-oz. serving

Ingredients

  • 1 hard-boiled egg, chilled
  • 1 ripe banana, cut in large pieces
  • ½ cup plain kefir or thin yogurt
  • 1-2 tbsp. creamy peanut butter
  • 1 tbsp. honey
  • ¼ cup ice cubes
  • ¼ tsp. ground dried turmeric or 1 tsp. fresh minced turmeric rhizome
  • 1 tsp. granola

Directions

  1. In a blender, combine hard-boiled egg, banana, kefir, peanut butter, honey, ice and turmeric; blend until smooth, about 30 seconds.
  2. Pour into a serving glass and garnish with granola.
