DIRECTIONS
- Spray-coat full-size steam table pans.
- In mixing bowl, thoroughly blend egg mix, biscuit mix, Parmesan cheese, and garlic powder.
- With mixer on low speed, add water and milk to egg mixture, mixing until thoroughly blended and almost smooth.
- Pour about 3 quarts mixture into bottom of each pan.
- Using a food processor, purée pinto beans with milk, chili powder, cumin, and garlic salt.
- Spoon about 3 cups puréed bean mixture and 2 cups salsa over each pan to produce marbled effect.
- Combine onions, olives, and green peppers in a bowl. In separate bowl, combine cheeses. Sprinkle about 3 cups olive mixture and 2 cups cheese over each pan.
- Bake each pizza immediately in preheated oven until puffy, golden, and cooked through, about 20 to 25 minutes. Cool about 5 minutes before cutting each pan into 25 servings, 5x5. Serve immediately.
Note: Do not let uncooked egg mixture remain at room temperature for longer than one hour (including preparation and service time).
Contribution to School Lunch Program: Each serving provides 2.5 oz. meat/meat alternate, 1/2 serving bread alternate.
