Mexican Pizza Grande

All-purpose dried egg mix 1 lb. 14 oz. - 3 lb. 12 oz. -
Biscuit baking mix 2 lb. - 4 lb. -
Parmesan cheese, grated 7 oz. - 14 oz. -
Garlic powder - 1 1/2 Tbsp. - 3 Tbsp.
Water - 1 qt. + 3 1/2 cups - 3 qt. + 3 cups
Skim milk - 3 cups - 1 qt. + 2 cups
Canned pinto beans, drained 3 lb. 12 oz. - 7 lb. 8 oz. -
Skim milk 50 1 1/4 cups - 2 1/2 cups
Chili powder - 1/4 cup - 1/2 cup
Ground cumin - 3 Tbsp. - 1/4 cup
Garlic salt - 1 1/2 Tbsp. - 3 Tbsp.
Mild salsa - 1 qt. - 1/2 gal.
Onions, chopped 8 oz. - 1 lb. -
Ripe olive slices 1 lb. - 2 lb. -
Green peppers, chopped 1 lb. - 2 lb. -
Part-skim Mozzarella cheese, shredded 1 lb. - 2 lb. -
Reduced-fat Cheddar cheese, shredded 1 lb. - 2 lb. -

DIRECTIONS

  • Spray-coat full-size steam table pans.
  • In mixing bowl, thoroughly blend egg mix, biscuit mix, Parmesan cheese, and garlic powder.
  • With mixer on low speed, add water and milk to egg mixture, mixing until thoroughly blended and almost smooth.
  • Pour about 3 quarts mixture into bottom of each pan.
  • Using a food processor, purée pinto beans with milk, chili powder, cumin, and garlic salt.
  • Spoon about 3 cups puréed bean mixture and 2 cups salsa over each pan to produce marbled effect.
  • Combine onions, olives, and green peppers in a bowl. In separate bowl, combine cheeses. Sprinkle about 3 cups olive mixture and 2 cups cheese over each pan.
  • Bake each pizza immediately in preheated oven until puffy, golden, and cooked through, about 20 to 25 minutes. Cool about 5 minutes before cutting each pan into 25 servings, 5x5. Serve immediately.

Note: Do not let uncooked egg mixture remain at room temperature for longer than one hour (including preparation and service time).

Contribution to School Lunch Program: Each serving provides 2.5 oz. meat/meat alternate, 1/2 serving bread alternate.
