In preheated 425ºF oven, melt butter in 10 x 6 x 2-inch baking dish OR 9-inch
pie plate. Spread butter to coat bottom of dish. Set aside. Place eggs, milk, cottage cheese, flour, sweetener, vanilla, and cinnamon in
blender container. Cover and blend at high speed until smooth. Pour into hot
buttered pan. Bake until golden brown and sides are puffy, about 20 minutes.
Serve with fresh fruit, preserves, fruit or maple syrup, and/or cheese, if desired.
