In small bowl, beat together eggs, water, salt, and pepper until blended. Set aside.
Preheat broiler, In 10-inch omelet pan or skillet with ovenproof handle (wrap handle completely with aluminum foil) over medium heat, heat butter until just hot enough to sizzle a drop of water. Add bread cubes, broccoli, red pepper, and onion. Cook, stirring occasionally, until bread cubes are lightly toasted. Pour egg mixture into pan. Cook until eggs are almost set, about 10 to 12 minutes. Sprinkle with cheese and broil about 6 inches from heat until eggs are set, about I to 2 minutes. Slide onto serving platter and cut in wedges.
