1/4 cup low-fat mayonnaise, low-fat sour cream or half & half |

1 tablespoon lemon juice |

1 tablespoon drained capers, optional |

4 hard-cooked eggs, chopped |

1 package (10 oz.) frozen chopped spinach, thawed, drained and pressed |

4 ounces cream cheese, softened |

1 teaspoon garlic salt* |
Place mayonnaise, lemon juice, capers, if desired, and eggs in blender container or mixing bowl. Cover and blend or beat at medium speed until smooth. Turn blender or mixer on and off, scraping ingredients toward blades with rubber spatula, as necessary. Add spinach, cheese and garlic salt. Cover and blend or beat at medium speed, turning off and scraping as necessary, until mixture is well combined and of uniform consistency. Cover and chill to blend flavors. Serve as a spread or dip with fresh vegetables or crackers.
*1 package (4 oz.) garlic and herb-spiced semi-soft cheese may be substituted for the cream cheese and garlic salt.
