Popovers

If you’ve never baked with your children before, you might want to start with something easy, such as Popovers. Popovers are a simple batter bread. All you need to do for them is beat and pour. Then, a very hot oven creates steam inside the batter and the steam causes the breads to “pop”. As the breads bake, the eggs in the batter form a solid structure around the steam pockets. When done, each individual bread has an empty pocket in the middle with a crisp outer shell. Popovers are best straight from the oven. If you need to reheat them, though, you can bake them, uncovered, in a preheated 350° F oven for about 15 minutes.

Options
You and the kids can decide to eat Popovers plain, spread with butter or honey, sprinkled with Parmesan cheese or opened and filled with Eggs Goldenrod, scrambled eggs or creamed chicken. Or, perhaps you might prefer to jazz them up by adding about 1/2 teaspoon of a family-favorite herb to the batter – maybe dill, basil or thyme?

Hint
During the baking time, keep impatient youngsters busy setting the table, tossing a salad, making a filling for the Popovers or helping with other parts of the meal.

Easy Popovers

Makes 1 dozen
 
 
3 eggs
 
1 cup milk
 
2 tablespoons melted butter or cooking oil
 
1 cup all-purpose flour
 
1/2 teaspoon salt

In small mixing bowl at medium speed, beat eggs until foamy. Beat in milk and butter until blended. Add flour and salt. Beat at low speed until smooth, about 3 minutes. Fill greased popover pans, muffin cups or 6-ounce custard cups half full.

Bake in preheated 425° F oven until brown and firm, about 35 to 40 minutes. For crisper popovers, prick side of each with wooden pick and bake about 3 to 6 minutes longer. Loosen edges with narrow spatula or knife. Remove from pans or cups. Serve immediately after baking.
